Wagyu A5 Tartare: Avocado, house jocoque, hoja santa oil. Paired with Lyra Rosé, El Cielo.
Escamoles Tetela: Filled with fava bean purée, avocado purée, cauliflower. Paired with Parvada.
Crab: Honey, chipotle, yellow lemon, chives, crispy rice, shrimp mayonnaise, caviar. Paired with Dos Búhos Mosaico Blanco.
Sea Bass (Lubina): Apple purée with fennel, shrimp beurre blanc sauce. Paired with Tres Raíces.
Beignet: Truffle sauce, shiitake mushroom, crispy cauliflower, mint. Paired with Tres Raíces.
Pink Mole (Mole Rosa): Roasted beet, pistachios, horseradish, hibiscus. Paired with Megacero.
Braised Oxtail: Port demi-glace, malanga, truffle, curry-pickled pearl onion, porcini mushroom, crispy potato. Paired with Bodega Los Cedros.
